Moroccan Shredded Chicken - Gluten-Free

Ok, so I realize the picture you see blow is VERY boring.  I know.  But you know what?!  This is real life in our house.  Some nights, this is as "fancy" as it gets!  We're a real family, on the go and honestly, sometimes dinner is half eaten and I say "Crud!!  I forgot to take a picture!"  This was close to one of those nights, but I at least got something on a plate and took a picture!

Even though the picture doesn't do it justice, this was DELICIOUS!  I swear!  The spices were PERFECT and WONDERFUL!  You won't be disappointed!  Hopefully you'll have all these spices tucked into your cupboard somewhere and you can throw this together!  It's easy peasy!


Servings: 4-6

Ingredients:
3 lbs. boneless skinless chicken
1 tsp. cinnamon
1/2 tsp. paprika
1/2 tsp. ginger
1/2 tsp. turmeric
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. pepper
1 cup no sodium chicken stock 

Directions:
Mix the cinnamon, paprika, ginger, turmeric, cumin, salt and pepper together.


Place the chicken into your crock, then sprinkle the spice blend over the top. Add in the chicken stock. (Mine was frozen but it makes no difference!)


Cook on LOW for 5 hours or on HIGH for 2.5 hours.
Shred and mix back through the juices in the slow cooker.


Serve over rice, or however you choose.

Fiesta Lime Shredded Beef - Gluten-Free

As I was wondering around the grocery store, I came across the Mrs. Dash Fiesta Lime Seasoning.....the rest is history!

This meat becomes SO incredibly tender and just literally falls apart when it's done!  The flavor is amazing!  The Fiesta Lime seasoning is perfect.  It brings such great flavor mixed with the salsa.  Such simple ingredients...yet packed with so much flavor.  These are my favorite kinds of recipes!  Beware there is a lot of fat on the chuck roast, but it's really easy to separate from the meat.  I did it without a problem.

I served my beef over lettuce with lime infused Northern beans, fresh onions, salsa and sour cream on top.  It was seriously incredible!  This would be great in tacos, on enchiladas, on tostadas, in a burrito, on nachos, etc.


Servings: 10-12

Ingredients:
3-4 lb. boneless chuck roast
4 Tbsp. Mrs. Dash Fiesta Lime Seasoning
1/4 cup lime juice
1/2 cup minced red onion
3/4 cup salsa (fresh is best)

Directions:
Rub the Fiesta Lime seasoning all over both sides of the roast.

Add the onions and salsa on top.


Cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
Shred the beef, separating the fat and discarding it.  Place the beef back into the crock and stir with all the juices.

Serve whichever way you choose and ENJOY!

Simple Barbecue Pork Chops - Gluten-Free

You know when you walk around the grocery store....waiting for something to call your name because you have absolutely NO idea what you want to make for dinner the coming week?  Yup, that was me.  Wandering....around and around and around the grocery store.  LOL  I wound up in the pork section of the meat department, trying to find something not too expensive.  I came across pork shouder steaks which were on sale, so I bought those.  As I continued to wander aimlessly around the grocery store, picking up other things I needed, I found Mrs. Dash seasonings.  So, I picked up some Barebue Seasoning!

When I got home, I got right to work getting dinner ready for the next day!  I grew up eating pork chops weekly!  Some weeks, we had them 2-3 times.  My dad LOVES them.  I'm pretty sure we kept shake n' bake in business.  No, seriously.  We were never without it and never had our pork chops any other way.  I didn't even know you could make pork any other way!  In fact, when I was in college, I remember eating at my husband's parents' house and they were having applesauce with their pork chops.  I thought it was REALLY weird and asked if they had any barbecue sauce instead.  HAHAHAHA!!!  So, I threw my pork steaks in my crock with some Mrs. Dash barbecue seasoning and a tiny bit of water and hoped for the best.

These porch chops were awesome!  We all loved them and cleaned our plates!  My husband's only complaint was "why didn't you make more of them?!"  Whoops!  Guess that's a good complaint to have!


Servings: 4

Ingredients:
2-3 lbs. pork shoulder steak
2-3 Tbsp. Mrs. Dash barbecue seasoning
1/4 cup water

Directions:
Place the pork shoulder steaks into your crock and coat them on both sides with barbecue seasoning.


Pour in the 1/4 cup of water and cook on LOW for 5-6 hours or on HIGH for 2.5-3 hours.

Alison Elle Edible Art

This cake had ALLLLLL the moms talking at our son and daughter's recent birthday party!

This cake was EVERYTHING I asked for and SO MUCH MORE!
Alison is an INCREDIBLE artist!  Seriously, in-cre-di-ble!!!!!!

My son was in absolute "awe" when he set his eyes on this cake!  "Look at my fiya twuck cake mamma!  And fiya man Sam's on my cake!"  He was elated!!!!
It was SO much fun listening to my little guy (3) ramble on and on about his cake!  We had his birthday party at a place called Jungle Java and we saw very little of his during his birthday party because he was so busy playing!  When he did come back over to us, he wanted us to show him his cake.  He would just stand and stare at it, and continue to tell us everything about it!  It was adorable!

Cajun Shredded Chicken with Sweet Potatoes - Gluten-Free

I love anything spicy!  No, really, I do!  You can ask my husband.  When I was pregnant, EVERYTHING gave me acid reflux, yet I craved spicy even more.  My husband even took throwing out the things I had just bought to keep me from getting acid reflux and complaining!  LOL  I'll never forget the day he threw away my Fire Cheetos!  I was so mad!  Hahahahaaa!!

This shredded chicken wasn't all that spicy, but it had the flavor I was craving!  This was SO simple to throw together and a delicious and easy complete dinner.  The pineapple was a complete last minute addition and it was perfect!  The sweet potatoes were incredibly sweet and delicious as well.  You can serve them on the side, or on your salad.

I served my shredded chicken over lettuce, but my husband and kiddos had it on nachos!  They loved it!  


Servings: 6-8

Ingredients:
2-3 lbs. boneless skinless chicken breasts
1 Tbsp. olive oil
1 Tbsp. Cajun seasoning
8 oz. can crushed pineapple
1 Tbsp. honey
1/2 cup water

Directions:
Place the chicken in your crock and coat each side with olive oil and Cajun seasoning.


Place the sweet potatoes on top and then pour the can of crushed pineapples and all its juices over the top along with the honey.


Add the 1/2 cup of water and cook on LOW for 5-6 hours, or on HIGH for 2.5-3 hours.
When the chicken is cooked, remove it, shred it, then stir it back through the juices in the crock.

Serve whichever way you choose and enjoy!
