Ok, are you ready for this SUPER SIMPLE and EASY meal? Well, here it is.....
Lime Chicken Tacos
Ingredients:
1 lb. boneless skinless chicken breasts (or there about)
2 limes, juiced
1 Tbsp. Chili Powder
1 16 oz. jar Salsa of your choosing
1 cup frozen corn
Directions:
Place chicken breasts in Slow Cooker. Mix the juice of 2 limes and Chili Powder together. Pour over the chicken. Pour half the jar of Salsa over the top of the chicken. Turn the Slow Cooker on LOW for 6-8 hours.
When chicken is cooked, remove and shred it. Place it back in the Slow Cooker and add the corn and the remainder of your jar of salsa. Cook on low for approximately 1/2 hour, or until heated through.
Serve in a taco shell with toppings of your liking. Serve with Spanish Rice on the side for a wonderful accompaniment. Enjoy!
This was sooo easy to make, it took me no more than 3 minutes to put together this morning. Plus, I had to take the cat to the vets & had only 5 minutes to do the shredding, no problem, done & out the door. We ate ours on. 100 calorie tortillas with light sour cream, muy delicioso!
ReplyDeleteThis is so easy and one of my family's favorites! We eat it at least twice a month and use leftovers in quesadillas and it is simply delicious both ways!

DeleteWhen I made this was the first time is EVER recall my entire family of 6 being happy with the meal!!! It was cheap to boot:) I doubled the recipe and we had chicken taco salad the next day by putting it on chopped lettuce with Doritos & toppings!! Ty sooooooooo much! Love your site. Saves me tons of money & time with a big family:)
