Spinach, Feta and Green Olive Stuffed Meatloaf

WOW, just WOW!  This Meatloaf was amazing!  My husband told me tonight, "You do make a mean meatloaf!!!"  He never liked it growing up, but now he says he looks forward to it when I make it! :)  Kinda makes me a little giddy inside!

This is actually quite and impressive meatloaf!  It looks really pretty!  You will "wow" your guests....or even just your kids, with this one!  It really wasn't hard at all, I promise!

I stuffed my meatloaf with Feta, Green Olives and Spinach, but really, you could stuff this with whatever you like!  My husband and daughter LOVE green olives, so I added them!  It made them very happy!

Let's get to the good stuff!

Spinach, Feta and Green Olive Stuffed Meatloaf

Ingredients:
2  lbs. Ground Beef
2 eggs
3/4 cup of Italian Seasoned Bread Crumbs
1 pkg. Onion Soup Mix
1 1/2 tsp. Garlic Powder
1 1/2 tsp. Onion Powder
3/4 cup Feta Cheese
1 9oz. pkg Frozen Spinach, thawed and drained
1/4 cup Green Olives, sliced

Topping:
1/2 cup Ketchup
1/4 cup brown sugar

Directions:
In a bowl, mix together the first 6 Ingredients.

On wax paper, shape your meatloaf into a rectangle, about 1/2 inch thick or less.

Spread the Feta Cheese on top of your loaf, keeping it 1" from the edges.

Next, spread the Spinach on top of that.

Then, the Green Olives.

Start rolling your Loaf by lifting the edge of the wax paper and gently rolling it.

You may have to press down on your filling as you go so it doesn't "spill out."  I did and had no "spillage!"
It will look like this when completely rolled!

Seal it all up!
And place it in your non-stick sprayed Insert!

Spread the topping mixture over the top.
(There would have been a picture here had my camera battery not died!)

Cook on LOW for 6-7 hours or on HIGH for 4-5 hours
The last half hour or so, remove the lid.
(Mine busted open on top a bit, but it still held together!)

  1. Oh!! This looks SO DELICIOUS!! I so want to try it! But, my dear son is NOT in agreement. He says Meatloaf should just be MEAT...no veggies or cheese, lol!!! Oh well, I just might give it a try anyhow, how could he resist when he smells it cooking all day!

  2. I'm not a fan of meatloaf, but the ingredients here look great, I love feta and spinach and olives!!

    Wondering...what other topping could you use besides ketchup and brown sugar? That doesn't really seem to go with the meatloaf ingredients. Would it work with no topping?

    1. I used fresh spinach, but wilted it first then layered, it was delicious!

  9. Sas this on TroyPatch. Do you always use a crock pot liner? I am not a fan of plastics in my food. If you don't use a liner, do you need some liquid?

    1. No, I don't always use a liner. We love them here because they save us clean-up time. You do not need them to cook anything, they are just a novelty ;) You do not need to add any liquid :)

  10. I love this recipe! I made it on Sunday with hopes of having leftovers for the week. I ended up over cooking it (totally my fault) but it was still delicious! I made the meatloaf exactly as you instructed, and I wouldn't change a thing. Thank you for a wonderful recipe!
