It's SUPER DUPER easy! Ready for this?!
"Baked" Sweet Potatoes
Ingredients:
Sweet Potatoes, washed and dried
Directions:
Place as many sweet potatoes in your slow cooker as you would like (or that will fit!)
Cook on LOW for 4-5 hours depending on how many you have in there and how big they are.
You'll know they are done when you can easily poke your fork in them!
Enjoy!

DeleteAll squash and all potatoes do well in the microwave also. Just pierce so they don't explode or cut up and check until can be pierced with a fork or knife. This method takes much less time.
ReplyDeleteMy 88 year-old Dad has been doing sweet potatoes in the crock pot for years and he has a great idea. He lines the crock with aluminum foil with some hanging out over the edges to lift out the potatoes when they are done.

DeleteA little trick I learned a while back and it could lessen the cooking time is to put a cotton towel over the lid to help keep the heat in, I'd use one big enough so you could double it and give you more insulation.

I'going to try this with butternut, spaghetti and acorn squash, I'm also going to try Russet and Yukon Golds. If you're in a hurry you can't beat the microwave, I take a Russet and coat it with whatever oil you have and wrap it in plastic food wrap and nuke it til you can pierce it with a fork. I have a small microwave and 6-7 minutes on high does the trick. (mine's only 700 watts).

DeleteI wouldn't use plastic wrap as that is not good for you, why not wrap it in wax paper or even a paper towel ? Either would work.....I never heat anything in mwave using plastic wrap and for sure NO plastic containers for reheating.....absolutely not good for you....
