This Week's Plan 1-9-12

Let me tell you, Kindey Stones = NO FUN!  I'm tired of being in pain.  I'm just tired.  In case you're not following my "saga" (and it truly is at this point!  I could probably write a  book!  LOL) on Facebook, I've been having abdominal pain since the Monday before Thanksgiving.  About 5-6 doctors appointments later, a full physical, several ultrasounds and a CAT scan later, I had Kidney Stones. Large ones.  Long story short, I had surgery late last Wednesday, (don't get me started on on the 5 hour delay of my surgery.....on an empty stomach) which led to one of the stones being blasted, a stent being placed and one kidney stone embedded in my kidney.  Tomorrow, I get the stent removed.  I'm PRAYING I get some instant relief.  I was not able to return to work today due to the discomfort of the stent.

So, starting Wednesday, I hope to be a new woman!  LITERALLY!  I just want to be my ole' chipper, energetic self again!  IT SHALL HAPPEN!  (The power of positive thinking, right?!)

I was finally up to cooking last night, so my plan started yesterday.  I'm hoping it goes "as planned" this week!

Sunday - Tastefully Simple Savory Peach Brandy Glaze Chicken Strips with Fresh Asparagus served over Rice


Monday - Leftovers



Tuesday - Leftovers



Wednesday - Savory Sausage Stuffed Apples



Thursday - Leftovers



Friday - Garlic Chicken and Chorizo



Saturday - Leftovers

  1. wow thats simple maybe u should cook a bit more it sounds like ur hopeing u have left overs enough for mon and tue but i never have enough for 2 days worth of left overs since we eat left overs for breakfast and lunch at our house

  2. Good luck tomorrow! I hope you start to feel better after the stent is out.

    I used 2 of my slow cookers to make veggies for dinner last night - we had friends over and she was brining the main dish and I was doing bread and veggies. It was nice to get them taken care of early in the day and then have the stove and oven free for her stuff. I might do some kind of chicken for quesadillas in the crock today or tomorrow.

  3. We have some leftover Spaghetti from this weekend to use up, plus leftovers from last night. :) I make sure to cook more than we can eat in one night. I kind of have it down to a science ;)
