Balsamic Chicken

This was a delicious and healthy dinner!  I LOVE balsamic vinegar!  My husband and I honeymooned in Venice and Paris and we fell in LOVE with it!  In fact, at the airport in Venice, they had little packets of balsamic vinegar instead of ketchup, mustard or mayonnaise.  It's a staple in our house now. :)

You will love how easy this is to throw together, especially on a busy night or morning!  I put everything in the Slow Cooker the night before an stuck it in the fridge.  In the morning, I pulled it out about 1/2 hr. before I left to let the Crock come up to room temp a bit and then started it up before I left!  When I got home, my husband cooked the pasta while I fed the baby.

   Balsamic Chicken

Ingredients:
2 lbs. FROZEN boneless skinless chicken breasts
2 Tbsp. (approx) Olive Oil
1/2 tsp. salt
1/2 tsp. pepper
1 28oz. can Diced Tomatoes (or 2 of the smaller cans)
1/2 cup Balsamic Vinegar
2 tsp. sugar
2 tsp. garlic powder
2 tsp. Italian Seasoning
1 onion, halved and sliced
Pasta

Directions:
Place the frozen chicken into the slow cooker insert and drizzle with olive oil.  Sprinkle it with salt and pepper.

In a bowl, mix together the Diced Tomatoes, balsamic vinegar, sugar, garlic powder and Italian Seasoning.

Place the onions over the chicken and then pour the diced tomato mixture over that.

Cook on LOW for 7-8 hours or on HIGH for 3-4 hours.
Serve over pasta.
Enjoy!

  2. Not a big fan of onions unless green but I love the combo of tomato and balsamic. I would probably just dice up green onion on top when it was done... def. on my list to try... sounds great!

  6. It does not HAVE to be frozen, but I like that I can cook it longer without worrying about it drying out. You can use fresh chicken, just cut down the cook time by a couple hours.

  7. I was wondering exactly what types of herbs are in your Italian seasoning as I do not have any. However, I do have oregano, basil, parsley, and probably a couple more. What spices should I use and how much do you think?

    Also, what kind of balsamic vinegar do you use?

  8. Jami, Yes, this would definitely work!!! I don't use a fancy type of Balsamic....whatever I got on sale at the grocery store!

  11. Dinner was great! This was very good...sweet and tangy. The sauce was thinner than I expected, but it didn't mmatter. Yummy!!! The baby, the 2 year old and I all enjoyed it, and my hubby will be happy with the leftovers! :)

  15. I was so excited to try this...... have to say my family and I were disappointed. :( It was only OK.... We had it for dinner last night and it was more than "tangy" it was very, very spicy and Hot. I asked my wife if she had user red pepper flakes instead of regular ground pepper... She said she followed the recipe exatly... I like "heat" but this recipe turned out very differently than expected... Belive me I really wanted to like it, but just couldn't

    1. There's really nothing in this that would make it spicy? Did your wife used the tomatoes with Green Chilis by accident or a different kind of vinegar? That's all I can really think of! We have a 4 year old daughter and we all ate it together without any complaints of spiciness. My neighbor has an almost 3 year old and they make it at least once every other week with no complaints either. I'm sorry you didn't like it!

  16. Just found your blog and am going to try the Balsamic Chicken for my family tonight.

    It might appear elsewhere but I can't see how many servings the recipe is for.

    I'm cooking for 5 so I added 50% to the ingredients.

  17. We made this today in spite of my wife's apprehension. Bottom line: She's no longer apprehensive. It was GOOD. I mean really GOOD!! My daughter asked for seconds. I can't wait for leftovers for lunch tomorrow. :)

    1. If you use fresh, not frozen, do everything the same, just cook on LOW for about 8 hours. For Frozen, cook 9-10 hours on low

  23. PS One doesn't have to be as busy as you to enjoy the slow cooker -I'm a SAHM of 1 (very active 3 year old) and I cannot live without my slow cooker. With a husband who works erratic hours the slow cooker is fabulous -thanks for the great recipes!
