Pumpkin and Apple Stuffed Pork Loin - Featuring BBQ Pulled Pork Crock Pot Seasoning Mix

A good idea just became a GREAT idea!  This was DEEEE-licious!!!!  The pumpkin and apples paired PERFECTLY with the pork, as did the BBQ Pulled Pork Crock-Pot Seasoning Mix I used as a rub!  It was seriously perfect!

I can see how some of you may be running right now, knowing this is "stuffed!"  Ok, here's the thing....this would have intimidated me a couple years ago too.  BUT, I'm here to help you!  Remember, I always take step-by-step pictures to help you!  I promise you can do this!  It may not be perfect, but no one cares if it's perfect, so relax!  (Mine was not perfect....nor was I able to cut a "perfect" slice for my pictures, but oh well!)  I'll be here cheering you on!  YOU CAN DO THIS!

This is super healthy for your family and it requires very few ingredients!  I sincerely hope you enjoy this!


Ingredients:
1 cup Canned Pumpkin
1 medium apple, peeled, cored and diced
1/8 tsp. Nutmeg
1/2 tsp. Cinnamon
1 Tbsp. Sugar
2.5 lb. Boneless Pork Loin
1/2 packet BBQ Pulled Pork Crock-Pot Seasoning Mix
1/4 cup water

Butcher's Twine

Directions: (I used a 3 Quart Slow Cooker)
In a bowl, mix place the pumpkin and apples.

Add in the nutmeg, cinnamon and sugar and stir it up.


Next, take your pork loin and slice it in half horizontally just enough so it lays flat and is still ONE piece! Like this...

Slide 4 pieces of butcher's twine underneath your loin, evenly spaced like so

Spread your pumpkin and apple mixture over the top of your pork loin.

It's time to roll it!  Breathe!  You can do this!  It won't roll super tight and some of the mixture will ooze out.  It's ok!  You can just push it back on to the ends....it'll stick!

Now, tie up those pieces of twine.

Sprinkle half of the BBQ Pulled Pork seasoning on and pat it into the loin.

Place your pork loin in your crock, seasoned side down.
Sprinkle the rest of the BBQ Pulled Pork Seasoning on this side.
Add the 1/4 cup of water.

Cook on LOW for 7-9 hours or on HIGH for 3.5-4.5 hours.

  1. This looks like it'll be worth the considerable effort to prepare! I'm a little curious as to why you've chosen a packet seasoning mix though - I'm guessing it's a brand you've used before?

    Looking forward to trying this one though!

      I used this seasoning Mix because I am a judge for the Crockin' In the USA contest in which these spice mixes have to be used for a recipe contest. I am using them and experimenting with them. If you don't want to use it, this would be fabulous without it. :)

  2. I covered this with Apple butter instead of seasoning mix.
    It was a huge hit!
    They are requesting it for Easter this year.
