Easy Pot Roast

After two days on my pre-3 hour glucose test diet, I was so happy to have some "real" food!  LOL  By that I mean, I was able to eat the meat, but chose a cup of fresh salad over 1/2 cup of the cooked veggies I would have been able to have!

When I put this roast in the crock pot today, I realized I didn't have what I usually do when I make a pot roast.  So, I improvised!  It turned out great!  Lots of yummy juices to douse my meat in and I enjoyed every last bite tonight!  Best of all, it took me less than 10 minutes to get it in the Crock Pot!

So, here's how I made it happen:

Easy Pot Roast

Ingredients:
3-4 lb. Pot Roast
4 Potatoes, washed, sliced
1/2 bag baby carrots (or as many as you would like!)
2 onions, peeled, quartered
salt to taste
pepper to taste
garlic powder to taste
minced onion to taste (I used Tastefully Simple Onion Onion!)
1/4 cup water (although, I had a very small amount of wine left, so I used some of that in replacement of the water)

Directions:
In the bottom of the crock pot, place all the potatoes, onions and carrots.  Sprinkle with salt, pepper, garlic powder and minced onion.

Place the roast on top of the vegetables and sprinkle with all the seasonings as you wish.


Pour water in.

Cook on LOW for 7-8 hours.  

Enjoy!
