White Chocolate and Mixed Berry Cobbler/Cake

I have been bound and determined to have cake at my house for 2 weeks now.  Today was the day!  And gosh darnit, we had CAKE!  (Although, it was more of a cake/cobbler really.) From the CROCK POT Slow Cooker!!!  LOL  It was soooo good!  So moist and delicious.  My husband would have LOVED to have had Ice Cream to go with this, but alas, we had none in the house.  I loved it just the way it was and so did my daughter!  The coolest thing about this cake is you don't have to wait for it to cool or frost it!  It's perfect just the way it is!

TIP: You can substitute the fruit for whatever frozen fruit sounds good to you!

Mine burnt around the edges a bit and was a little thick, so I've made some changes to my recipe below.

So, here's how I made it happen:

White Chocolate Mixed Berry Dump Cake


Ingredients:
1 Yellow Butter Cake Mix (or use plain white or yellow)
1 stick butter, melted
1/4-1/2 cup white chocolate chips
2 cups frozen mixed berries
3 Tbsp. water
2 tsp vanilla
1/4-1/2 cup brown sugar
non-stick cooking spray

Directions:
Spray the inside of your Slow Cooker with non-stick cooking spray.

Pour the Mixed Berries in the bottom of the Slow Cooker.

Pour the Vanilla over the top of the berries, along with the brown sugar.
(the white powder you see is corn startch.....don't use....doesn't need it!!!)

Mix the cake mix and butter in a bowl until it looks like this.....crumbly.

Next mix in the white chocolate chips.

Finally, pour the cake mixture over the mixed berries in the Slow Cooker.

Cook on HIGH for 3 hours.

  1. Do you think this could be done just the same with fresh berries or does the frozen add some moisture?

  2. It adds moisture ans also requires a longer cook time. I would say go ahead and give it a try with fresh berries! Just add maybe 3 more Tbsp. of water and check it around 2 hrs! Let me know if you do it and how it turns out!

  4. I just made this and when I added the butter to the cake mix it got pasty instead of crumbly. I don't know what I did wrong.

    1. That's very strange! Perhaps it was just the kind of cake mix you used? Not sure, sorry!

  5. To what and when are you supposed to add the 3 Tbsp of water? The cake mixture or the berries?

  6. I wanted to use yellow cake from scratch, instead of the box mix. Do you think this would work for your recipe (since it will be wet--might make it mushy (?)?
