Salsa Ranch Chicken with Black Beans

Mmmmmmmmmmmmmmmmmmmmmmmmmm!!!!!!!!!!!!!!  This was seriously, INCREDIBLY good! It was SO easy to make as well, which is why it has now made it's way to one of my FAVORITE Slow Cooker Meals of all time!  I cannot wait for you to try this!  It was PACKED with flavor and so simple.  I can't say enough about it!  Because of that, I'm going to get RIGHT to the recipe tonight!  Mmmmmmmmmm......LOL

P.S. This is great served in Tacos, Walking Tacos, on soft tortillas, or scooped up with tortilla chips!  YUM!!!  It would be a great tailgate recipe!!!!!

Salsa Ranch Chicken with Black Beans

Ingredients:
2 large boneless skinless chicken breasts (or about 1 lb.)
1 packet low-sodium taco seasoning
1 packet dry ranch dressing
1 cup (or more) salsa
1 can condensed Cream of Chicken soup
1 can black beans, drained

Sour Cream and Shredded Cheese to add on top!

Directions:

Place the chicken breasts in the bottom of the Crock Pot Slow Cooker and sprinkle with the taco and ranch packets.

Mix together the salsa, Cream of Chicken soup and black beans.

Pour the mixture over the Chicken.
(I used a Reynolds Slow Cooker Liner to save on clean up time!)

Cook on LOW for 5-6 hours or on HIGH for 3-4 hours.

Shred the Chicken and stir it in the sauce.
Serve over rice or on a tortilla
with some shredded cheese and a dollop of sour cream.
Enjoy!

  10. do you know if you can use frozen chicken breasts or do they need to be thawed first? i've only ever used my slow cooker for dips and meatballs... my twins are 7 and in scouts so we are starting to have those busy nights where it would be great to not have to try to prepare something in the evening. i'm thinking this may be a great 1st recipe to try! thanks!

    It will be soupier (due to the liquid from the frozen chicken) but would be fine. Increase the cook time to about 7-8 hours on LOW

  13. I made this today...There is NOTHING better than coming home from work, having my 17 year old son MEET ME AT THE DOOR to ask "Mom, when is dinner? That stuff in the crock smells awesome, and tastes AMAZING!" AGREED, it was FABULOUS!!! Can't wait to try it again!!! Made it almost as written. Added kidney beans instead of black beans because I had them on hand, and probably had 1 1/2 - 2 pounds of chicken, 4 medium sized breasts, as that is what was in the pack I took out of the freezer! Thanks SO much for sharing this awesome recipe, and thanks to so many fans for talking about it on your FB page recently that brought it to my attention! Can't wait to make it again. I'm sure it will become a new favorite!

  14. I made this last night. I literally threw it in the crockpot in 5 minutes that morning with frozen chicken. I had to use navy beans because that is all I had. I squuezed in some lime juice at the end. So so good. The 7, 5 and 2 year olds ate it until they saw the beans. Next time I will make this with refriend beans so they cant "find" them. Thank you for this one. It is going unto the rotation!

  16. Making this for dinner tonight. I added a can of corn to help stretch the recipe. My husband loves it and always eats two helpings. Then there isn't enough left overs for the next night. :)

  17. This was SOOOO Good! I'm sure this will be a regular in our house. Loved to that is was so simple and quick to put together. I did add a part of a jar of jalopenos. We like it spicy :) Thanks for the recipe!

  18. Made this today for dinner this evening-SOOOOO good!!! I used three chicken breasts, so I could have increased the salsa and maybe even the cream of chicken soup slightly. During the cooking process, I was worried that the mixture would be too soupy, but I wound up adding some chicken stock after shredding the chicken because I needed more liquid! I will be sure not to cook quite as long (4 hours on high) or shred the chicken quite as much next time, but the recipe is FABULOUS! My super picky 2 and 5 year olds loved it! Thanks so much!

  24. I put about 4 chicken breasts in the slow cooker and pour on top a jar of salsa, a drained can of black beans, and a drained can of corn. I eat it as a dip, as nachos, and in tortillas. It's best in whole wheat ones. This looks good enough to try as something a little different.

  31. I've been making something similar to this for about 3 or 4 years. My girlfriend would make it - again, not exactly the same as mine but similar. I use 2# chicken breast (boneless skinless), sprinkle with the taco seasoning and into the crock pot and then pour on 1 12 oz bottle of ranch and a 12 oz. jar of salsa and cook 5 or 6 hours. I then shred the chicken with 2 forks, add the black beans (opt) and heat till beans are warm through. I make taco's, enchiladas, burritos out of it and sometimes serve it over rice. Everyone who eats it loves it.
