Apple and Onion Pork Loin

WOW, WOW, WOW was this good! My house smelled AMAZING when I walked in today!  So amazing in fact, my husband said he lifted the lid to take a closer sniff and practically burned his face with the steam!  LOL....he's fine, don't worry, that's why I can laugh a bit! ;)

This pork loin took practically no time at all to prepare, but tasted like I put a ton of time into it!  This would impress your guests for sure!

My only complaint here is I felt like there weren't enough apples to scoop up with my pork, so I adjusted the recipe below to include more!  :)

I used a McCormick seasoning I had in my cupboard, but if you can't find it, no biggie!  I'll give you a tip below on a blend of spices you can use to create your very own rub!

I hope you enjoy this as much as we did!  We were all members of the "Clean Plate Club" tonight!

P.S.  I ran out of potatoes, which I originally had planned to throw in, but I think it was a happy coincidence!  I ended up making instant mashed potatoes, mixed with some sour cream and fresh chives.  They were awesome!

Apple and Onion Pork Loin

Ingredients:
2.5-3 lb. Boneless Pork Loin
1 Chicken bouillon cube
6 Tbsp. (approximately) McCormic Savory Herb Roasting Rub (If you can't find this, make your own rub with 2 tsp. garlic powder, 2 tsp. minced onion, 1 tsp. salt, 2 tsp. sage, 2 tsp. thyme and 2 tsp. rosemary)
1 onion, halved and sliced
3-4 apples, (whatever kind you like) peeled and sliced
1/2 cup water
olive oil

Directions:
In your crock, place your pork loin.
Coat it with olive oil and cover your loin with your rub all over.

Put your bouillon cube in with 1/2 cup of water and top your pork loin with the apples and onions.

Cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
ENJOY!

  3. My entire family, even the the kids, loved this recipe! I browned the loin first & then put on the rub. I also pureed the apples & onions with a hand blender after i removed the cooked meat, added some flour & water to make a gravy & it was delicious!

  6. Wow…this is so simple and looks so delicious. Personally I am not really like fresh apple, but after long cooking time, I think I will love this. The apple must be soft and sweet. By the way, thinking to try pineapple and peach versions and add a bit of brown sugar, so it a bit sweet. :)

  10. In the crockpot now and smells amazing! I layered the bottom of the crockpot with sliced apples and cinnamon and placed tenderloin on top. I cut a few slits in the top of the tenderloin and placed a slice of Apple in each and rubbed down with olive oil, black pepper,
and Old Bay seasoning. To top it off I tossed in a large sliced sweet onion and some more apple slices. Can't wait!!
